Rotisserie Chicken Nachos


1 Gateway Chipotle rotisserie chicken (chipotle-flavored, meat pulled & shredded)
1 bag La Poblanita tortilla chips
½ cup Field Day Organic Black Beans
1 can Hatch diced green chiles
⅓ cup red onion, diced
3 cloves garlic, minced
2 bags Organic Valley Mexican Blend Shredded Cheese
12 ounces Cocina Selecta queso fresco
¼ cup cilantro, chopped
1 avocado, sliced


1. Preheat oven to 375˚.

2. Pull meat from rotisserie chicken; shred into uniform pieces.

3. Spread one layer of chips on a nonstick baking sheet. Top with ⅓ your total of shredded chicken, black beans, green chiles, red onion, garlic and cheeses.

4. Repeat until you have three layers. Place in oven until cheese is melted and bubbles.

5. Remove from oven and top with cilantro and avocado.
