Roasted Asparagus with Hollandaise Sauce
Hollandaise Sauce2 egg yolks
½ of the juice of one lemon
1 stick (8 tablespoons) butter
Salt, pepper and Tabasco sauce to taste
Preparation1. Combine egg yolks and lemon juice in a pot.
2. Using a food processor or hand blender, slowly add butter to egg yolk lemon mixture until sauce thickens. Hold warm until ready to serve.
3. Place pieces of roasted or grilled asparagus on each plate; top with desired amount of Hollandaise sauce. Season with salt, pepper and Tabasco sauce. Serve.
