Oatmeal Stuffed Apples with Maple Syrup


1 tablespoon butter
1 cup McCann's Steel Cut Oatmeal
4 cups hot water
1 ¼ teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon cardamom
¼ teaspoon kosher salt
1 cup chopped Honeycrisp apple
¼ cup pure maple syrup
¼ cup chopped walnuts


1. Melt butter over medium heat in a sauce pan. Add in steel cut oatmeal and toast until fragrant, about 2 minutes.

2. Stir in cinnamon, nutmeg, cardamom and salt.

3. Add hot water. Stir and bring to a boil. Cover, turn heat to low and allow the oats to cook for 20 minutes.

4. Remove lid and stir in chopped apple and maple syrup. Continue cooking, uncovered, for about 10 minutes.

5. While oats are cooking for the remaining 10 minutes, hollow out the center of 3 apples.

6. When oats are finished cooking, spoon them into hollowed out apples. Drizzle with maple syrup and top with chopped walnuts. Serve while hot!
