Mexican Street Corn Dip

Author's Notes

Leave the seeds in the jalapeño for extra heat!


1 ½ cups sweet corn, cut from the cob
1 jalapeño, diced
½ teaspoon salt
½ teaspoon chili powder
2 tablespoons fresh cilantro
2 oz. Cotija cheese
Juice from ½ lime


1. Add all ingredients to a small bowl and mix well.

2. Refrigerate until well-chilled and enjoy with your favorite tortilla chips.
