George’s Layered Greek Dip

Ingredients

Tzatziki

Ingredients
• 1 cup cucumber (peeled, seeded and cubed)
• 1 cup green onion (chopped)
• 24 oz cream cheese
• 1 teaspoon sea salt
• 1 teaspoon garlic (chopped)
Directions
Combine all ingredients into a food processor. Grind until smooth.

Tomato Relish

Ingredients
• 2 cups tomatoes (chopped and drained)
• 1 cup green onions (chopped)
• 1/4 red onion (diced)
• 2 Tablespoons olive oil
• 1 teaspoon sea salt
• 1/2 jalapeño pepper (diced)
Directions
Combine all ingredients in a bowl; season to taste.

Olive Tapenade

Ingredients
• 2 cups sliced Kalamata olives (check for pits)
• 2 teaspoons fresh garlic (chopped)
• 2 Tablespoon olive oil
• 1/8 teaspoon rosemary
Directions
Chop all ingredients fine in food processor.

Layered Dip

Ingredients
• 3 cups Tzatziki (use recipe provided or purchase your favorite)
• 2 cups (1 pint) Gateway Market hummus
• 2 cups olive tapenade (use recipe provided or purchase your favorite)
• Tomato relish (use recipe provided)
• 2 cups feta cheese
• 3 cups finely shredded lettuce

Preparation
Using a large, shallow dish (i.e., glass lasagna pan), spread ingredients in layers in the following order: Tzatziki, hummus, olive tapenade, feta cheese and tomato relish.

Serve with Gateway Market pita chips, cut pita bread or sliced cucumber "chips."
