George's Lasagna


1 ½ pounds Rustichella d'Abruzzo Riccia pasta
2 pounds cooked Gateway Market housemade sausage
1 ½ pounds Organic Valley ricotta cheese
¾ cups grated Pecorino Romano cheese
6 cups shredded Mozzarella
6 cups Uncle Steve's Organic Marinara Sauce


Cook the sausage and drain.

Boil pasta in salted water and drain.

In a large bowl, mix 4 cups of sauce, sausage, ricotta, 4 cups of the mozzarella cheese and ¾ cup grated Pecorino Romano together. Add the warm pasta and stir to mix until all the pasta is coated with the ingredients.

Place mixture in a 12x18, 4-inch deep greased pan.

Spread 2 cups of mozzarella cheese evenly on top of the pasta mixture and 2 cups of sauce on top of the cheese. Bake about 45 minutes in a preheated 375 degree oven until the cheese is melted and the casserole is bubbly. Add additional cheese if desired.

Let it rest 30 minutes and serve.
