Fresh Tomato Calzone


2 cups shredded mozzarella OR Gateway Market housemade fresh mozzarella, sliced
3 cups Parmigiano Reggiano, grated
2-3 tomatoes, sliced, seasoned with salt and pepper
4 basil leaves, torn
1 Gateway Market pizza dough


1. Preheat oven to 375 degrees.

2. Roll out pizza dough on a lightly floured surface to about 14 inches x 8 inches.

3. Lay out half of the mozzarella in the lower half of the dough from end-to-end, leaving about a half inch on each side.

4. Lay out 1 cup of the Parmesan cheese, the seasoned tomatoes and torn basil. On top of the tomatoes, add 1 more cup of the Parmesan cheese and the remaining mozzarella.

5. Brush the edges of the dough with a little water (just to make it sticky). Fold down the top half of the dough, sealing the dough where it is folded onto the lower half of the dough. Use your fingertips to crimp the dough and place onto a greased cookie sheet.

6. Let it rest for about 10 minutes to create a good seal.

7. Brush the top with olive oil and slit the top of the dough at an angle in 3 evenly-spaced places.

8. Bake in 375 degree oven. As soon as the crust starts to brown add 1 more cup of grated cheese, spread evenly over the top of the calzone. Bake until brown.
