Easy Cauliflower Crust (Gluten free)

Ingredients

Non-stick cooking spray
2 ½ cups cauliflower, grated
1 large egg, lightly beaten
2 cups parmesan cheese
Kosher salt
Freshly ground black pepper

Toppings:
¼ cup tomato sauce
1 cup mozzarella
1 cup grape tomatoes, halved
2 cloves garlic, chopped
3 tablespoons fresh basil leaves

PREPARATION


1. Preheat oven to 425 degrees F.

2. Line a rimmed baking sheet with parchment paper.

3. Grate the cauliflower using a box grater until you have 2 ½ cups of crumbles. Place crumbles in a large bowl, and microwave, covered, for seven minutes or unitl soft. Remove from microwave and allow to cool.

4. Mix in the lightly beaten egg, parmesan cheese, salt and pepper. Once combined, pat mixture into a 10-inch circle on the pizza pan. Spray the top with nonstick spray and bake for 10 to 15 minutes, or until golden.

5. Top the pizza with sauce, mozzarella, grape tomatoes and garlic. Bake in the oven until melted and bubbly. Top with basil before serving.
