Chicken Salad with Almond Honey Mustard Dressing
Salad:2 teaspoons Bel Aria olive oil
2 boneless skinless chicken breasts, diced
2 cups grapes, halved
1 cup fresh blueberries
3 cups romaine lettuce, chopped
½ cup feta cheese
½ cup chopped almonds
Dressing:3 tablespoons Barney Butter smooth almond butter
1 tablespoon Bel Aria olive oil
2 tablespoons orange juice, freshly squeezed
3 tablespoons water
1 tablespoon Inglehoffer stone ground mustard
½ tablespoon Tree of Life raw honey
pinch of salt
½ teaspoon garlic
PREPARATIONHeat olive oil in a large skillet over medium heat. Sprinkled the diced chicken breast with salt and pepper. Sauté in the oil until cooked through. When cooked, remove from heat and set aside and allow to cool.
Spread your lettuce across the bottom of your bowl or plate. Arrange fruit, cheese, nuts and chicken atop the lettuce.
For the dressing, purée all ingredients in a food processor until smooth. Pour over salad and serve.
