Cauliflower Hummus

Author's Notes

Chef Bill recommends using an extra virgin olive oil with fruity notes, like Bel Aria.

Ingredients

4 cups cauliflower florets
2 tablespoons water
2 tablespoons Bel Aria extra virgin olive oil
½ teaspoon salt
1 ½ teaspoon minced garlic
1 teaspoon tahini paste
3 tablespoons lemon juice
1 teaspoon minced garlic
3 tablespoons Bel Aria extra virgin olive oil
½ teaspoon salt

PREPARATION


1. Place cauliflower florets, water, 2 tablespoons extra virgin olive oil, ½ teaspoon salt and 1 ½ teaspoons minced garlic in a microwave safe dish with a lid. Cover and microwave for about 15 minutes or until softened.

2. Put the cauliflower mixture into your blender. Add tahini paste, lemon juice, 1 teaspoon minced garlic, 3 tablespoons extra virgin olive oil and ½ teaspoon salt. Blend until smooth.

3. To serve, spoon the hummus into a bowl and drizzle with extra olive oil. Optional: top with fresh herbs or paprika for garnish.
