Best Breakfast Skillet


½ pound bacon
½ pound Italian sausage
½ teaspoon salt
½ teaspoon black pepper
¼ teaspoon fresh garlic, minced
1 teaspoon hot sauce
4 cups frozen shredded hash browns
1 small onion, finely diced
8 ounces Mozzarella, shredded
8 ounces Parmesan, grated
6 eggs, slightly beaten


1. Cook bacon using your preferred method. Cut into small, bite-sized pieces and set aside.

2. Preheat oven to 350 degrees.

3. Sauté sausage in skillet until cooked through. Remove from skillet and set aside on a paper towel lined plate.

4. Sauté the diced onion in the same skillet.

5. In a large bowl, combine hash browns with salt, pepper, garlic, hot sauce and all but 1/2 cup of both the Mozzarella and Parmesan cheeses.

6. Stir in bacon, sausage and diced onions. Mix well.

7. Stir in slightly beaten eggs.

8. Add mixture back to skillet. Top with the rest of the cheese.

9. Bake for 35-40 minutes or until all of the cheese on top is bubbling.

10. Broil the casserole for a few minutes to brown the cheese if desired.

11. Cool, slice and serve!
