Beef Tenderloin with Three Cheeses

George Formaro: One of the first recipes I created. This is a favorite for many of my guests.


For 4 servings:

8 – 4 ounces Certified Angus Beef tenderloin filets
4 tablespoons Parmesan, grated
4 tablespoons asiago cheese, grated
4 tablespoons gorgonzola, crumbled
4 tablespoons butter, softened
¼ teaspoon garlic, chopped
1 teaspoon parsley, chopped
A pinch of freshly ground black pepper


1. Heat broiler.

2. Mix cheeses, butter, garlic, parsley, and pepper. Mix well and divide into 8 balls.

3. Season tenderloins with salt and pepper. Cook on open grill or in a sauté pan. Cook tenderloins to just below desired final temperature.

4. Place tenderloins on cookie sheet; top each with a ball of cheese mixture. Flatten the cheese on top of the filet using the back of a fork.

5. Place cookie sheet into broiler and cook until cheese is bubbling. Remove from broiler, place on plate and serve.
