Apple Cinnamon Oatmeal Bread


2 cups all purpose flour
1 cup Bob's Red Mill organic old fashioned oats
2 teaspoons Simply Organic cinnamon
2 teaspoons baking powder
1 cup sugar
¼ teaspoon salt
¾ cup vegetable oil
2 eggs, beaten
½ cup Fage plain Greek yogurt
1 cup Santa Cruz applesauce
½ teaspoon vanilla extract

1 cup Woodstock powdered sugar
¼ cup applesauce


1. Preheat oven to 350 degrees F.

2. Grease a nonstick loaf pan.

3. Mix by hand: flour, oats, cinnamon, baking powder and salt.

4. In another bowl, mix sugar, oil, eggs, yogurt, applesauce and vanilla.

5. Stir wet mixture into flour mixture by hand until combined.

6. Pour the batter into your loaf pan and bake for 45 minutes or until a toothpick inserted into the center is clean when removed.

7. Remove from oven and set aside to cool.

8. Combine powdered sugar and applesauce for the glaze. When the bread has cooled, pour the glaze over the top — it will set, but remain slightly sticky.
