Orange Marmalade Vinaigrette

Produce

  • Fresh Basil (1/4 cup chopped)

Groceries

  • Prepared Orange Marmalade (1 cup)
  • Red Wine Vinegar (1/2 cup)
  • Kosher Salt (1 ½ tsp)
  • Black Pepper (1 tsp)
  • Honey (2 tsp)
  • Sugar (2 Tbl)
  • Extra Virgin Olive Oil (1 cup)

Mix together all ingredients except the oil.  Whisk ingredients while slowly adding the oil until well incorporated.  Refrigerate until ready to use.  Allow vinaigrette to sit at room temperature for half an hour before using.  Mix well.

This dressing is used at Mojos restaurant on their summer salad.  Mojos summer salad also contains baby greens, arugula, Mandarin oranges, toasted almonds, red onion, Manchego cheese and chilled roasted chicken.  Be creative and use the salad ingredients of your choice and enjoy this refreshing salad dressing!

For some extra fun, pair the Orange Marmalade Vinaigrette with Sauvignon Blanc, tea roses, and some Wynton Marsellus music.
